Tomato and Avocado Salsa

This is one of my quick favourite salad recipes. When I live in London I actually didn't like tomatoes, somehow I always ended up with tasteless watery tomatoes, but after some time and experience, I learnt a few things about how to check for tasty juicy ripe tomatoes.

Here are my checkpoints, these are just according to my personal experience.


Colour -I find the redder they are the better.

Size - I always choose small-medium sized tomatoes.

Smell - Ripe tomatoes usually have a tomato fragrance, if they have absolutely no smell I don't take them.

Country of Origin -In my dreams when I have a garden I wish to grow my own but for now, I try to buy locally produced organic if it's off-season I tend to go for tomatoes from Italy.


Ingredients


  • 4 medium Tomatoes, seeded and diced

  • 1 cup chopped onion

  • 1 small chilli (optional)

  • 1 medium firm but ripe Avocados

  • 4 tablespoons olive oil

  • 3 tablespoons of lime juice or1drop lime essential oil.

  • 1/2 teaspoon salt

  • 1/4 teaspoon ground black pepper

  • 1/2 cup cilantro leaves chopped.




Instructions


  1. Add diced tomatoes, Avocado, cilantro and chopped onions (and chilli if you are using it) to a bowl and mix thoroughly.

  2. If you will use lime essential oil, in a separate small bowl or cup add olive oil and use the toothpick method to add the lime essential oil, after adding to the salsa.
