Creamy Tomato and Bean Soup

This classic and simple Creamy tomato and bean soup recipe is sure to be hit with all the family or a perfect starter for any dinner party.

For this recipe I use Black Pepper and Basil DoTerra essential oils, they really add a flavorful punch to the dish. If you don't have the essential oils don't worry you can just simply use real pepper and real basil. It tastes just as good!.




 

Ingredients

  • 2 tablespoons extra-virgin olive oil

  • 1 medium yellow onion, chopped

  • ½ teaspoon fine sea salt

  • 2 tablespoons tomato paste

  • 1 large can of whole tomatoes.

  • 2 cups vegetable broth

  • ½ cup cooked cannellini beans, rinsed and drained

  • 2 tablespoons unsalted butter.

  • 1 teaspoon brown sugar, to taste

  • Freshly ground black pepper or Black Pepper essential oil

  • 10 to 15 fresh basil leaves or basil essential oil


Instructions


1. Cook chopped onion in olive oil until tender, then add tomato paste.


2. Add whole canned tomatoes and vegetable broth, and gently simmer for 30 minutes.


3. Transfer the soup to a blender, and add a few more essential ingredients.


4. Blend until completely smooth, and serve.

Oil Safety

For all my cooking recipes I only recommend using Do-Terra oils as it is tested and approved for internal use. If you don’t have the oil you can always use simple fresh basil leaves.
